A peculiar structural feature is that the bonds of the molecules that form isomaltulose (alpha(a)-1,6-glycosidic) are more stable than those of the molecules present in sucrose. The particular bond existing between its two components (fructose and glucose) is in fact such as to slow down the speed of absorption. However, this process takes place much more slowly than what happens for other better known sugars (such as sucrose).
