Its production takes place through modern enzymatic conversion techniques starting from sucrose and, like sucrose, it is totally digested in the intestine. A peculiar structural feature is that the bonds of the molecules that form isomaltulose (alpha(a)-1,6-glycosidic) are more stable than those of the molecules present in sucrose. For this reason this disaccharide is highly appreciated by athletes who want to maintain optimal performance: blood sugar and insulin levels increase much less than when other sugars are consumed. The particular bond existing between its two components (fructose and glucose) is in fact such as to slow down the speed of absorption.
