Its production takes place through modern enzymatic conversion techniques starting from sucrose. Isomaltulose has a high sweetening power, and for this reason it is often compared (and replaced) to sucrose, and like this, it is totally digested in the intestine, even if its digestion takes place more slowly. Characterizing structural feature that the bonds of the molecules that form isomaltulose (alpha(a)-1,6-glycosidic) are more stable than that of the molecules present in sucrose, therefore, an interesting and much appreciated note for the sportsman who wants maintain optimal performance, blood sugar and insulin levels increase much less than other sugars. This particular type of bond existing between these two components (fructose and glucose) is such as to slow down the speed of absorption.
Subsequently our intestinal disaccharidases, which are the enzymes capable of breaking the molecular bond existing between the two sugars forming the disaccharide, will favor their subsequent absorption and bioavailability, proceeding much more slowly for isomaltulose than for other disaccharide sugars better known, such as, for example, sucrose. Consequently, the blood sugar and insulin levels will have a much smaller rise and will in any case be very gradual without creating spikes or dramatic glycemic drops, making it a very useful element in particular for endurance sports such as cycling, athletics, cycling, triathlon , cross-country skiing, etc. Its main feature is its low glycemic index and a reduced osmolarity compared to glucose and fructose, sources of carbohydrates widely used in the past in sports supplementation, but which have various limitations or potential side effects. The split glucose enters the blood longer than with the use of other sugars, with a lower stimulation of insulin release. Isomaltulose has a glycemic index similar to fructose, however compared to it, it has the advantage of having less "impact" on the hepatic production of triglycerides and is therefore more suitable than fructose, or classic sugar mixtures used by athletes based on fructose, glucose and/or maltodextrins.
